Ingredients

2 cups shredded zucchini (about 2 medium zucchinis)

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup brown sugar, packed

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

½ cup vegetable oil (or melted coconut oil)

3 large eggs

1 teaspoon vanilla extract

½ cup chopped walnuts or pecans (optional)

For the Cinnamon Glaze:

1 cup powdered sugar

2 tablespoons milk (or dairy-free alternative)

¼ teaspoon ground cinnamon

½ teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

Prepare the Zucchini: Shred the zucchini using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel or paper towels and squeeze to remove excess moisture. Set aside.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, whisk together the vegetable oil, eggs, and vanilla extract until smooth.

Combine All Ingredients: Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the shredded zucchini and nuts if using. Be careful not to overmix; a few lumps are okay.

Bake the Bars: Pour the batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Bars: Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.

Prepare the Cinnamon Glaze: In a small bowl, whisk together the powdered sugar, milk, ground cinnamon, and vanilla extract until smooth and drizzly. Adjust the consistency by adding more milk or powdered sugar as needed.

Glaze the Bars: Once the zucchini bars are completely cool, drizzle the cinnamon glaze over the top with a spoon or whisk for an artistic touch.

Slice and Serve: Cut the bars into squares or rectangles and serve. Enjoy your delicious, moist zucchini bars with a delightful cinnamon glaze!
