Ingredients
  

1 lb ground beef (or turkey for a healthier option)

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 cup salsa (mild, medium, or hot based on preference)

2 cups tortilla chips, crushed (plus extra for topping)

2 cups shredded cheddar cheese (or Mexican blend)

1 cup sour cream

1/4 cup chopped fresh cilantro (optional)

1 avocado, diced (for garnish)

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large skillet, over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spatula. Drain any excess fat.

      Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent, about 3-4 minutes.

        Stir in the black beans, corn, diced tomatoes, taco seasoning, and salsa. Mix until well combined and let it simmer for about 5-7 minutes.

          In a large mixing bowl, combine the crushed tortilla chips and half of the shredded cheese. This will create a flavorful base for your casserole.

            Spread the tortilla chip and cheese mixture evenly in the bottom of a 9x13-inch baking dish.

              Pour the beef mixture over the chips, spreading it evenly.

                Top with the remaining shredded cheese and a few extra crushed tortilla chips for crunch.

                  Cover the dish with aluminum foil (to avoid burning the cheese) and bake for 25 minutes.

                    After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                      Let the casserole cool for about 5 minutes. Once cooled, dollop sour cream on top and sprinkle with chopped cilantro and diced avocado for garnish.

                        Slice, serve, and enjoy your delicious and hearty taco casserole!
