2 English muffins, split in half

4 large eggs

1 cup shredded mozzarella cheese

1/2 cup cherry tomatoes, halved

1/4 cup cooked and crumbled breakfast sausage or bacon (optional)

1/4 cup bell pepper, diced

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper, to taste

Fresh basil leaves, for garnish

Olive oil, for drizzling

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Muffins: Place the split English muffins on a baking sheet, cut sides facing up. Drizzle lightly with olive oil and toast in the preheated oven for about 5 minutes until slightly golden.

      Cook Eggs: While the muffins are toasting, cook the eggs to your liking. You can scramble, fry, or poach them. Season with garlic powder, onion powder, salt, and pepper.

        Assemble Pizzas: Once the muffins are toasted, remove them from the oven. On each muffin half, layer shredded mozzarella cheese, a few cherry tomato halves, diced bell pepper, and crumbled sausage or bacon if using.

          Add Eggs: Top each muffin with a cooked egg. You can place them whole or crumble them for easier eating.

            Final Cheese Layer: Sprinkle a little more mozzarella cheese on top of the eggs for that cheesy goodness.

              Bake: Return the assembled breakfast pizzas to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.

                Garnish & Serve: Remove the breakfast pizzas from the oven and let them cool for a couple of minutes. Garnish with fresh basil leaves before serving. Enjoy with a drizzle of olive oil for an extra flavor boost!
