Ingredients

2 cups all-purpose flour

2 cups granulated sugar

3/4 cup unsweetened cocoa powder

2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup buttermilk (or milk mixed with 1 tbsp vinegar)

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

15 Oreos, crushed (for batter)

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract (for whipped cream)

18-20 whole Oreos (for decoration)

Chocolate ganache (optional for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Combine Wet Ingredients: In a separate bowl, beat the eggs. Then add buttermilk, vegetable oil, and vanilla extract, mixing well.

Combine All Ingredients: Gradually add the wet mixture to the dry ingredients, mixing until just combined. Carefully stir in the boiling water; the batter will be very thin. Fold in the crushed Oreos until evenly distributed.

Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cakes: Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, turn them out onto a wire rack to cool completely.

Make the Whipped Cream: In a large mixing bowl, beat the heavy whipping cream until soft peaks form. Add powdered sugar and vanilla extract, continuing to beat until stiff peaks form.

Assemble the Cake: Once the cakes are completely cool, place one layer on a serving platter. Spread a generous layer of whipped cream on top and sprinkle with additional crushed Oreos.

Add the Second Layer: Place the second cake layer on top and cover the entire cake with whipped cream. Decorate the top with whole Oreos and drizzle with chocolate ganache if desired.

Chill: Refrigerate the cake for at least 30 minutes before serving to allow the whipped cream to set.

Serve: Slice and serve this delicious Extreme Oreo Cake with a big smile!
