Fall Crockpot Veggie Lasagna

Ingredients
  

9 lasagna noodles (uncooked)

2 cups zucchini, diced

2 cups mushrooms, sliced

1 cup butternut squash, cubed

1 cup spinach, chopped

1 cup ricotta cheese

2 cups marinara sauce

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon Italian seasoning

Salt and pepper to taste

Olive oil for drizzling

Instructions
 

Prep the Veggies: In a large mixing bowl, combine the zucchini, mushrooms, butternut squash, spinach, minced garlic, Italian seasoning, salt, and pepper. Drizzle lightly with olive oil and toss to coat evenly.

    Layer the Ingredients: Start by spreading a thin layer of marinara sauce at the bottom of the crockpot. Place 3 uncooked lasagna noodles over the sauce.

      Add the Veggie Mixture: Spoon half of the vegetable mixture over the noodles, followed by half of the ricotta cheese, then 1/3 of the mozzarella cheese, and a sprinkle of Parmesan cheese.

        Repeat Layers: Add another layer of marinara sauce, followed by another 3 lasagna noodles. Repeat the layering process with the remaining vegetable mixture, ricotta, mozzarella, and a sprinkle of Parmesan. Finalize with a last layer of marinara sauce, the remaining 3 noodles, and the top layer of cheeses (mozzarella and Parmesan).

          Cook: Cover the crockpot with the lid and cook on low for 6-8 hours or on high for 3-4 hours, until the noodles are tender and the cheese has melted beautifully.

            Serve: Once cooked, allow the lasagna to sit for about 10-15 minutes before slicing. Serve warm, garnished with fresh basil or parsley if desired.
