Ingredients

1 lb (450g) firm white fish fillets (such as cod or haddock), cut into strips

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika (smoked or sweet, based on preference)

Salt and pepper, to taste

Cooking spray or olive oil spray

Optional: lemon wedges and tartar sauce for serving

Instructions

Prep the Fish: Start by patting the fish strips dry with paper towels. This will help the coating adhere better and ensure a crispy finish.

Set Up Breading Station: In three shallow bowls, set up your breading station. In the first bowl, place the flour and season it with salt (1/2 teaspoon) and pepper (1/4 teaspoon). In the second bowl, beat the eggs. In the third bowl, combine the breadcrumbs with garlic powder, onion powder, paprika, and a pinch of salt and pepper.

Bread the Fish: Take one fish strip and dip it into the flour, ensuring it’s fully coated. Shake off any excess flour, then dip it into the beaten eggs, letting the excess drip off. Finally, dredge the fish in the breadcrumb mixture, pressing gently to ensure the crumbs stick well. Repeat this process with all fish strips.

Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes, which will help in achieving that golden-brown finish.

Arrange in Air Fryer: Lightly spray the air fryer basket with cooking spray. Arrange the breaded fish sticks in the basket in a single layer, making sure they don’t overlap. You might need to do this in batches depending on the size of your air fryer.

Air Fry: Spray the tops of the fish sticks lightly with cooking spray. Air fry at 400°F (200°C) for about 10-12 minutes, flipping halfway through, until they are golden and crispy.

Serve: Remove the fish sticks from the air fryer and let them cool for a minute. Serve warm with lemon wedges and tartar sauce on the side for dipping.
