Ingredients
  

4 large bell peppers (any color)

1 pound ground turkey or beef

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 packet taco seasoning (about 1 oz)

1 cup salsa (mild, medium, or spicy, based on preference)

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt (for serving, optional)

Olive oil spray

Salt and pepper to taste

Instructions
 

Prepare the Bell Peppers:

    - Cut the tops off the bell peppers and remove the seeds and membranes. Rinse them under cold water and pat them dry with a paper towel.

      Cook the Meat:

        - In a large skillet, heat a drizzle of olive oil over medium heat. Add the ground turkey or beef, season with a pinch of salt and pepper, and cook until browned, breaking it up with a spatula (about 5-7 minutes). Drain excess fat if necessary.

          Add Remaining Ingredients:

            - To the cooked meat, add the cooked rice, black beans, corn, taco seasoning, and salsa. Mix well and cook for about 2-3 minutes until heated through. Taste and adjust seasoning if needed.

              Stuff the Peppers:

                - Using a spoon, generously fill each bell pepper with the taco mixture. Press down gently to pack the filling. Top each stuffed pepper with a sprinkle of shredded cheese.

                  Air Fry the Peppers:

                    - Preheat your air fryer to 360°F (180°C). Lightly spray the stuffed peppers with olive oil to help them brown and crisp up.

                      - Place the filled bell peppers in the air fryer basket, making sure they’re not overcrowded. You may need to cook them in batches depending on the size of your air fryer.

                        - Cook for 12-15 minutes until the peppers are tender and the cheese is melted and bubbly.

                          Serve:

                            - Carefully remove the stuffed peppers from the air fryer. Garnish with fresh cilantro and serve with sour cream or Greek yogurt on the side if desired.
