2 cups grated zucchini (about 2 medium zucchinis)

1 cup grated carrots (about 2 medium carrots)

1 cup chopped spinach (fresh or thawed from frozen)

1/2 cup all-purpose flour (or gluten-free flour for a gluten-free option)

1/4 cup grated Parmesan cheese (optional for a cheesy flavor)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Cooking spray or olive oil for drizzling

Prep the Veggies: Grate the zucchini and carrots using a box grater or food processor. To remove excess moisture, place the grated zucchini in a clean kitchen towel and squeeze out as much water as possible. This step is crucial for achieving crispy fritters.

    Combine Ingredients: In a large mixing bowl, add the grated zucchini, grated carrots, chopped spinach, flour, Parmesan cheese, eggs, garlic powder, onion powder, paprika, and season with salt and pepper. Mix everything together until well combined. The mixture should be moist but hold together when formed into patties.

      Form the Fritters: Using your hands, scoop an amount of the mixture (approximately 2 tablespoons) and shape it into a small patty or fritter. Repeat until all the mixture is used, making about 10-12 fritters.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Air Fry the Fritters: Lightly spray the basket of your air fryer with cooking spray or drizzle with olive oil. Place the fritters in a single layer in the basket, ensuring they don’t touch each other for even cooking. You may need to do this in batches depending on your air fryer size.
