1 cup grated zucchini (excess water squeezed out)

1 cup grated carrot

1 cup fresh spinach, finely chopped

1/2 cup corn kernels (fresh or frozen)

1/2 cup breadcrumbs (panko works best for crunch)

1/4 cup grated Parmesan cheese (optional)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

Cooking spray or olive oil for spritzing

Preheat the Air Fryer: Start by preheating your air fryer to 380°F (190°C) for about 5 minutes.

    Prepare the Veggies: In a large bowl, combine the grated zucchini, grated carrot, chopped spinach, and corn. Mix well and ensure the zucchini is dry to avoid sogginess in the fritters.

      Mix the Batter: To the vegetable mixture, add breadcrumbs, Parmesan cheese (if using), eggs, garlic powder, onion powder, oregano, salt, and pepper. Stir everything together until well combined, forming a thick batter.

        Shape the Fritters: Using your hands (lightly greased to prevent sticking), form small patties, about 2-3 inches in diameter. You should get around 10-12 fritters, depending on the size.

          Prepare the Air Fryer Basket: Lightly spray the air fryer basket with cooking spray or olive oil to prevent sticking.

            Air Fry the Fritters: Place a batch of fritters in the preheated basket in a single layer (avoid overcrowding). Spray the top lightly with olive oil for extra crunch. Cook for 10-12 minutes, flipping halfway through, until they are golden brown and crispy.

              Keep Cooking: Repeat with the remaining fritters, adjusting the spray and cooking time as needed.
