4 large flour tortillas

1 cup shredded cheese (Cheddar, Monterey Jack, or a blend)

1 cup bell peppers, diced (any colors you like)

1 cup zucchini, diced

½ cup red onion, diced

1 cup corn (fresh or frozen)

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Olive oil spray

Fresh cilantro, chopped (for garnish)

Sour cream or salsa (for serving)

Prepare the Veggies: In a large mixing bowl, combine the diced bell peppers, zucchini, red onion, corn, garlic powder, cumin, smoked paprika, salt, and pepper. Mix well to combine all the flavors.

    Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Layer half of the tortilla with a generous amount of the shredded cheese, followed by a portion of the veggie mixture. Top it with a little more cheese (this helps to seal the quesadilla) before folding the tortilla in half.

      Repeat: Repeat the process with the remaining tortillas and filling until you have four quesadillas.
