4 large flour tortillas (or whole wheat for a healthier option)

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 cup bell peppers (mixed colors, diced)

1 cup zucchini (diced)

1 cup mushrooms (sliced)

1/2 cup red onion (thinly sliced)

1 cup corn (frozen or canned, drained)

1 teaspoon cumin

1 teaspoon paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

Olive oil spray

Fresh cilantro for garnish (optional)

Salsa, sour cream, or guacamole for serving

Instructions
 

Prepare the Veggies:

    - In a mixing bowl, combine the diced bell peppers, zucchini, mushrooms, red onion, and corn. Season with cumin, paprika, garlic powder, salt, and pepper. Mix well to ensure the vegetables are evenly coated in spices.

      Assemble Quesadillas:

        - Lay one tortilla flat on a clean surface. Sprinkle a generous amount of cheese on half of the tortilla, followed by a portion of the seasoned veggie mixture. Add a little more cheese on top of the veggies, then fold the tortilla over to create a half-moon shape. Repeat with the remaining tortillas and filling.

          Preheat the Air Fryer:

            - Preheat your air fryer to 375°F (190°C) for about 5 minutes.

              Air Fry Quesadillas:

                - Lightly spray the air fryer basket with olive oil. Place 2 quesadillas in the basket (or as many as can fit in one layer). Lightly spray the tops of the quesadillas with olive oil as well. Air fry for about 8 minutes, flipping halfway through, until they are golden and crispy. Repeat with the remaining quesadillas.

                  Slice and Serve:

                    - Once the quesadillas are done, allow them to cool for a minute. Use a sharp knife or pizza cutter to slice them into wedges. Garnish with fresh cilantro if desired. Serve hot with salsa, sour cream, or guacamole on the side.
