Ingredients

For the Cauliflower Crust:

1 medium head of cauliflower (about 5 cups riced)

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

For the Toppings:

1 cup cooked shredded chicken (can use rotisserie chicken)

1/2 cup barbecue sauce (preferably low-sugar)

1 cup shredded mozzarella cheese

1/4 cup red onion, thinly sliced

1/4 cup chopped fresh cilantro (optional, for garnish)

For Serving:

Extra barbecue sauce (for drizzling)

Instructions

Prepare the Cauliflower Crust:

    - Preheat your oven to 425°F (218°C).

      - Remove the leaves and stem from the cauliflower, and cut it into florets. Pulse in a food processor until it resembles rice (or buy pre-riced cauliflower).

        - Steam the riced cauliflower for about 5 minutes to soften it, then let it cool for a few minutes.

          - Place the steamed cauliflower in a clean dish towel and wring it out to remove as much moisture as possible. This step is crucial for a crispy crust.

            - In a large mixing bowl, combine the riced cauliflower, mozzarella cheese, Parmesan cheese, egg, garlic powder, oregano, salt, and pepper. Mix until well combined.

              - Line a baking sheet with parchment paper. Spread the cauliflower mixture into a circular shape, about 1/4 inch thick, on the parchment paper.

                - Bake in the preheated oven for 15-20 minutes, until the crust is golden brown and firm.

                  Assemble the Pizza:

                    - While the crust is baking, mix the shredded chicken with barbecue sauce in a bowl until fully coated.

                      - Once the cauliflower crust is ready, remove it from the oven and spread the remaining barbecue sauce over the top, leaving a slight border around the edges.

                        - Evenly distribute the glazed chicken mixture over the sauce, then sprinkle with shredded mozzarella cheese and top with sliced red onion.

                          Final Baking:

                            - Return the pizza to the oven and bake for an additional 8-10 minutes, or until the cheese is bubbly and slightly golden.

                              Serve:

                                - Remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro if using, and drizzle with extra barbecue sauce before slicing and serving.
