1 lb boneless, skinless chicken breasts, cut into strips

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 medium bell pepper (any color), sliced

1 medium onion, sliced

1 cup cooked rice (white or brown)

1 cup corn (canned, frozen, or fresh)

1 can (15 oz) black beans, drained and rinsed

1 cup diced tomatoes (fresh or canned)

1 avocado, sliced

½ cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Season the Chicken: In a bowl, combine the cut chicken strips with olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Mix well to coat the chicken evenly. Allow it to marinate for about 15 minutes for better flavor.

    Cook the Chicken: In a large skillet over medium-high heat, add a drizzle of olive oil. Once hot, add the marinated chicken strips and cook for 5-7 minutes or until browned and cooked through. Remove from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the sliced bell pepper and onion. Sauté for 5 minutes until they are tender, stirring occasionally. If needed, season with a pinch of salt and pepper.
