4 whole wheat tortillas

1 cup shredded mozzarella cheese (or a dairy-free alternative)

1 cup shredded cheddar cheese

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 medium bell pepper, diced (any color)

1 small zucchini, diced

1/2 cup chopped spinach

1 teaspoon ground cumin

1 teaspoon chili powder

1 tablespoon olive oil

Salt and pepper to taste

Salsa and sour cream for dipping

Prepare the Veggies: In a large mixing bowl, combine black beans, corn, bell pepper, zucchini, and chopped spinach. Season with cumin, chili powder, salt, and pepper. Drizzle with olive oil and mix until the veggies are evenly coated.

    Assemble the Quesadillas: Place one tortilla on a clean surface. Sprinkle a layer of shredded mozzarella and cheddar cheese on half of the tortilla. Add a generous portion of the veggie mixture on top of the cheese. Sprinkle more cheese over the veggies and fold the tortilla in half, pressing gently to seal.

      Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.

        Air Fry the Quesadillas: Lightly spray the air fryer basket with cooking spray. Place one quesadilla in the basket (you may need to cook them in batches) and spray the top lightly with cooking spray. Cook for 5-7 minutes, or until the tortilla is golden brown and crispy. Flip halfway through for even cooking.
