4 boneless, skinless chicken breasts

1/4 cup maple syrup

2 tablespoons soy sauce

1 tablespoon sriracha (or to taste)

2 cloves garlic, minced

1 teaspoon ground ginger

Salt and pepper to taste

2 cups mixed vegetables (bell peppers, broccoli, and carrots)

2 tablespoons olive oil

1 tablespoon fresh cilantro, chopped (for garnish)

Juice of 1 lime

Prep the Marinade: In a large bowl, whisk together the maple syrup, soy sauce, sriracha, minced garlic, ground ginger, salt, and pepper.

    Marinate the Chicken: Place the chicken breasts in the bowl with the marinade, ensuring they are well coated. Let them marinate in the fridge for at least 30 minutes (or up to 2 hours for more flavor).

      Preheat the Oven: Preheat your oven to 425°F (220°C).

        Prepare the Vegetables: In a separate bowl, toss the mixed vegetables with olive oil, salt, and pepper until evenly coated.

          Arrange on Baking Sheet: Line a baking sheet with parchment paper. Place the marinated chicken breasts in the center of the sheet and arrange the mixed vegetables around them.
