Ingredients
  

2 cups diced potatoes (russet or Yukon gold)

1 cup diced bell peppers (red, green, and yellow for color)

1 cup chopped onion

1 cup sliced mushrooms

1 cup cooked and crumbled breakfast sausage (or bacon/ham for variation)

6 large eggs

1 cup whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat a splash of oil over medium heat. Add diced potatoes and cook for 10 minutes, stirring occasionally until they are slightly softened. If necessary, cover with a lid to help steam them.

      Add chopped onion, bell peppers, and mushrooms to the skillet. Sauté for another 5-7 minutes until the vegetables are tender. Season with garlic powder, onion powder, smoked paprika, salt, and pepper.

        In a large bowl, whisk together the eggs and milk. Season the mixture lightly with salt and pepper.

          Once the vegetables are cooked, remove the skillet from heat. Stir in the crumbled breakfast sausage, then pour the egg and milk mixture over all the ingredients in the skillet.

            Carefully transfer the mixture into a greased 9x13-inch baking dish. Spread it evenly and sprinkle the shredded cheddar cheese on top.

              Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the casserole is golden on top.

                Remove from the oven and allow to cool slightly for about 5 minutes. Garnish with fresh parsley before serving.
