4 large eggs

100g feta cheese, crumbled

1 cup fresh spinach, roughly chopped

1 small red onion, finely diced

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh dill or chives, for garnish (optional)

Sliced avocado and crusty bread, for serving (optional)

Instructions
 

Sauté the Onions: In a non-stick skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for about 3-4 minutes until they become translucent and slightly caramelized.

    Add Spinach: Stir in the chopped spinach and cook for another 2 minutes until wilted, mixing it well with the onions.

      Season: Sprinkle in the smoked paprika, salt, and black pepper; mix to combine. Reduce the heat to low.

        Fry the Eggs: Crack the eggs directly into the skillet over the spinach mixture. Allow them to cook undisturbed for about 3-4 minutes, or until the whites are set but the yolks are still runny. If you prefer your yolks more cooked, cover the skillet with a lid for an additional minute or so.

          Add Feta: While the eggs are cooking, sprinkle the crumbled feta cheese evenly over the eggs. Let it melt slightly for the last minute of cooking.

            Serve: Once the eggs are cooked to your liking, remove the skillet from heat. Using a spatula, gently transfer the eggs and spinach mixture to serving plates. Garnish with fresh dill or chives if desired.

              Optional Additions: Serve with slices of avocado and a piece of crusty bread on the side for a complete meal.
