1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour for a GF option)

1 cup almond milk (or any milk of your choice)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup Sriracha sauce

2 tablespoons rice vinegar

1 tablespoon honey or agave syrup (for a vegan option)

2 tablespoons olive oil

Chopped green onions and sesame seeds for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (232°C). Line a large baking sheet with parchment paper or a silicone mat for easy cleanup.

    Prepare the Cauliflower: In a large mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.

      Make the Batter: Gradually whisk in the almond milk until you achieve a smooth batter. It should be thick enough to coat the cauliflower florets but not too thick.

        Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it’s well-coated. Shake off any excess batter and place it on the prepared baking sheet in a single layer.

          Bake: Bake the cauliflower in the preheated oven for 20-25 minutes, or until the florets are crispy and golden-brown. Stir them halfway through baking for even crisping.

            Prepare the Fiery Sauce: In a small bowl, whisk together the Sriracha sauce, rice vinegar, honey (or agave), and olive oil until well combined.

              Toss and Serve: Once the cauliflower bites are done baking, remove them from the oven and transfer them to a large mixing bowl. Pour the Fiery Sriracha sauce over them and toss gently until they are evenly coated.
