Fire-Roasted Corn Salsa

4 ears of fresh corn, husked

1 medium red onion, finely diced

2 medium tomatoes, diced

1 jalapeño pepper, seeds removed and finely chopped

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and black pepper to taste

Instructions
 

Roast the Corn: Preheat your grill to medium-high heat. Place the husked corn directly on the grill grates and roast, turning occasionally, until the kernels are charred and tender, about 10-12 minutes. Remove from the grill and allow to cool.

    Prepare the Corn: Once cooled, use a sharp knife to carefully slice the kernels off the cob into a large mixing bowl.

      Combine Ingredients: To the bowl with the roasted corn, add the diced red onion, tomatoes, chopped jalapeño, and cilantro.

        Season the Salsa: Squeeze the juice of the two limes over the mixture. Sprinkle in the ground cumin, smoked paprika, salt, and black pepper.

          Mix Well: Stir all the ingredients together until well combined. Taste and adjust seasoning if necessary, adding more lime juice, salt, or pepper according to your preference.

            Let it Rest: For the best flavor, cover the salsa and refrigerate for at least 30 minutes to allow the flavors to meld.

              Serve: Serve chilled or at room temperature with tortilla chips, on tacos, or as a refreshing topping for grilled meats or fish.
