Ingredients

1 pound large shrimp, peeled and deveined

1 cup buttermilk

1 teaspoon hot sauce (more or less to taste)

1 cup all-purpose flour

1 cup cornstarch

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (adjust for heat preference)

1/2 teaspoon salt

1/2 teaspoon black pepper

Oil for frying (vegetable or peanut oil)

1 tablespoon chopped fresh parsley for garnish (optional)

For the Firecracker Sauce:

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha (or more for extra heat)

1 teaspoon honey

1 teaspoon lime juice

Salt to taste

Instructions

Prep the Shrimp:

    - In a bowl, combine the buttermilk and hot sauce. Add the shrimp and let it marinate for at least 30 minutes to an hour in the refrigerator. This helps tenderize the shrimp and infuse flavor.

      Make the Firecracker Sauce:

        - In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, lime juice, and a pinch of salt. Taste and adjust the spiciness to your liking. Set aside.

          Prepare the Breading:

            - In a large mixing bowl, combine flour, cornstarch, paprika, garlic powder, cayenne pepper, salt, and black pepper. Mix well to incorporate all the seasonings.

              Heat the Oil:

                - In a deep skillet or frying pan, heat about 2 inches of oil over medium-high heat. To test if the oil is hot enough, drop a small piece of bread into the oil; if it sizzles and bubbles, the oil is ready.

                  Bread the Shrimp:

                    - Remove the shrimp from the buttermilk mixture, shaking off excess liquid. Dredge each shrimp in the seasoned flour mixture, ensuring they're well coated. Shake off any excess breading.

                      Fry the Shrimp:

                        - In batches, carefully add breaded shrimp to the hot oil, avoiding overcrowding. Fry for about 2-3 minutes on each side or until they turn golden brown and crispy. Use a slotted spoon to remove the shrimp and transfer them to a paper towel-lined plate to drain the excess oil.

                          Serve:

                            - Plate the crispy firecracker shrimp and drizzle with the prepared Firecracker Sauce or serve it on the side for dipping. Garnish with chopped parsley if desired.

                              Dig In:

                                - Serve them hot and enjoy the perfect balance of crispy and spicy goodness!

                                  Prep Time, Total Time, Servings:
