Ingredients
  

1 lb large shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

1/2 tsp salt

1/2 tsp black pepper

1 cup panko breadcrumbs

Vegetable oil, for frying

For the Firecracker Sauce:

1/4 cup mayonnaise

2 tbsp sriracha (adjust to taste)

1 tbsp honey

1 tsp soy sauce

1 tsp lime juice

1/2 tsp garlic powder

1/2 tsp sesame oil

Chopped green onions and sesame seeds, for garnish

Instructions
 

Marinate the Shrimp:

    In a medium bowl, combine the shrimp and buttermilk, making sure all the shrimp are well-coated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

      Prepare the Coating:

        In a shallow dish, mix the flour, cornstarch, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. In another dish, place the panko breadcrumbs.

          Coat the Shrimp:

            Remove the shrimp from the buttermilk, letting any excess drip off. Dredge each shrimp in the flour mixture, shaking off any excess. Then, dip the shrimp back into the buttermilk and finally coat them with the panko breadcrumbs, pressing gently to ensure they stick.

              Make the Firecracker Sauce:

                In a small bowl, whisk together the mayonnaise, sriracha, honey, soy sauce, lime juice, garlic powder, and sesame oil until smooth. Taste and adjust the seasoning to your liking.

                  Heat the Oil:

                    In a deep skillet or pot, heat about 2 inches of vegetable oil over medium-high heat. You can test if the oil is ready by dropping a small piece of bread; if it sizzles, it's hot enough for frying.

                      Fry the Shrimp:

                        Carefully add the coated shrimp in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 2-3 minutes per side. Use a slotted spoon to remove them and drain on a paper towel-lined plate.

                          Serve:

                            Arrange the crispy shrimp on a serving platter. Drizzle with the firecracker sauce or serve it as a dip on the side. Garnish with chopped green onions and sesame seeds for an extra burst of flavor.
