1 lb boneless, skinless chicken breasts, cubed

1 cup unsalted roasted cashews

1 cup broccoli florets

1 red bell pepper, sliced

1 carrot, thinly sliced

3 green onions, chopped (white and green parts separated)

3 cloves garlic, minced

1 tablespoon ginger, minced

1/4 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 teaspoon red pepper flakes (adjust to taste)

Cooked jasmine rice or quinoa (for serving)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the cubed chicken, soy sauce, oyster sauce, hoisin sauce, rice vinegar, sesame oil, and cornstarch. Toss to coat, and let it marinate for at least 30 minutes (or up to 2 hours for better flavor) in the refrigerator.

    Prepare the Vegetables: While the chicken marinates, prepare your vegetables. Wash and chop the broccoli, slice the red bell pepper, and thinly slice the carrot. Set aside.

      Sauté the Chicken: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the marinated chicken in a single layer (you may need to do this in batches) and cook for about 5-7 minutes until golden brown and cooked through. Remove the chicken and set it aside.

        Stir-Fry the Vegetables: In the same skillet, add the minced garlic, ginger, and the white parts of the green onions. Sauté for about 30 seconds until fragrant. Then add the broccoli, red bell pepper, and carrot. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

          Combine and Toss: Return the cooked chicken to the skillet with the vegetables. Add the roasted cashews and red pepper flakes. Mix everything well, allowing the flavors to meld for an additional 2-3 minutes.
