Ingredients

1.5 pounds baby red potatoes, washed and halved

3 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon sea salt

1/2 teaspoon black pepper

1 tablespoon lemon juice

Zest of 1 lemon

Optional: 1/4 teaspoon red pepper flakes for a spicy kick

Instructions

Preheat Oven: Start by preheating your oven to 425°F (220°C). This high temperature will help achieve a crispy exterior on the potatoes.

Prepare the Potatoes: In a large mixing bowl, add the halved baby red potatoes. Ensure they are well-washed to remove any dirt.

Mix the Oil and Herbs: In a small bowl, combine the olive oil, minced garlic, chopped rosemary, thyme, parsley, sea salt, black pepper, lemon juice, lemon zest, and red pepper flakes if using. Mix thoroughly until all the ingredients are well incorporated.

Coat the Potatoes: Pour the herb-infused oil mixture over the halved baby red potatoes. Use a spatula or your hands to toss the potatoes until they are evenly coated with the mixture.

Arrange on a Baking Sheet: Line a baking sheet with parchment paper or foil for easy cleanup. Spread the seasoned potatoes in a single layer, cut side down, to ensure they crisp up nicely.

Roast the Potatoes: Place the baking sheet in the preheated oven and roast the potatoes for 25-30 minutes, or until they are golden brown and fork-tender. You may want to flip them halfway through for even cooking.

Finishing Touch: Once done, remove the potatoes from the oven and let them cool for a few minutes. Taste and adjust seasoning if necessary, possibly adding more salt or lemon juice to your preference.

Serve: Transfer the potatoes to a serving platter, and garnish with additional chopped fresh herbs if desired. Serve warm as a delightful side dish for any meal!
