2 tablespoons sesame oil

2 teaspoons soy sauce (or tamari for a gluten-free option)

1 teaspoon rice vinegar

1 teaspoon sugar (or honey)

1 clove garlic, minced

1 teaspoon sesame seeds, toasted

1 small carrot, julienned

2 green onions, finely chopped

1 tablespoon gochugaru (Korean red pepper flakes; adjust to taste)

Instructions
 

Prepare the Spinach:

    - Bring a pot of water to a boil. Add a pinch of salt. Blanch the spinach for about 30 seconds until wilted. Drain and immediately immerse in ice water to stop the cooking process (this helps retain the vibrant green color). Once cooled, drain and gently squeeze out excess water.

      Make the Dressing:

        - In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, sugar, minced garlic, and gochugaru until combined.

          Combine Ingredients:

            - In a large mixing bowl, add the blanched spinach, julienned carrot, and chopped green onions. Pour the prepared dressing over the salad.
