1 cup almond flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 large eggs

1/4 cup unsweetened almond milk (or any milk of choice)

2 tablespoons maple syrup (plus extra for serving)

1 teaspoon vanilla extract

2 tablespoons melted coconut oil (or butter)

Optional toppings: fresh berries, sliced bananas, nuts, or yogurt

Instructions
 

Mix Dry Ingredients: In a medium bowl, whisk together the almond flour, baking powder, baking soda, and salt until well combined.

    Combine Wet Ingredients: In another bowl, beat the eggs, then add the almond milk, maple syrup, vanilla extract, and melted coconut oil. Mix until smooth and well incorporated.

      Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to over mix; a few lumps are perfectly fine.

        Preheat the Pan: Heat a non-stick skillet or griddle over medium-low heat. Lightly grease with a bit of coconut oil or butter.
