3 ripe bananas, mashed

1/3 cup melted coconut oil or unsalted butter

1/2 cup granulated sugar

1 large egg, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup semi-sweet chocolate chips

Optional: 1/4 cup chopped walnuts or pecans

Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with non-stick spray.

    Combine Wet Ingredients: In a large mixing bowl, combine the mashed bananas and melted coconut oil (or butter). Stir until well blended. Add the granulated sugar, beaten egg, and vanilla extract. Mix until smooth and creamy.

      Mix Dry Ingredients: In a separate bowl, whisk together the baking soda, salt, and all-purpose flour. Make sure there are no lumps.

        Combine Mixtures: Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Be careful not to overmix! The batter should be slightly lumpy.
