1 ripe banana, mashed

1 cup rolled oats (blended into flour)

1 cup milk (dairy or non-dairy)

1 large egg

1 tablespoon honey or maple syrup (optional for sweetness)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 teaspoon vanilla extract

1 tablespoon coconut oil or butter (for cooking)

Prepare Oat Flour: In a blender, blend the rolled oats until they reach a fine flour consistency. This should yield approximately 1 cup of oat flour.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed banana, milk, egg, honey (if using), and vanilla extract. Whisk well until fully combined and smooth.

      Add Dry Ingredients: In a separate bowl, mix the oat flour, baking powder, baking soda, cinnamon, and salt. Slowly incorporate the dry mixture into the wet ingredients, stirring gently until just combined. Be careful not to overmix; some lumps are okay.

        Preheat Pan: Heat a non-stick skillet or griddle over medium heat. Add 1 tablespoon of coconut oil or butter and let it melt, coating the pan evenly.

          Cook Pancakes: Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes) and the edges start to look set. Carefully flip and cook for another 2-3 minutes until golden brown.
