1 cup buttermilk (or 1 cup milk + 1 tablespoon lemon juice)

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

Extra butter or oil for cooking

In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

    In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

      Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; some lumps are okay.

        Let the batter sit for about 5 minutes, allowing it to thicken slightly.

          Preheat a non-stick skillet or griddle over medium heat and add a little butter or oil to coat the surface.

            Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

              Flip the pancake and cook for another 1-2 minutes until golden brown and cooked through.

                Repeat with the remaining batter, adding more butter or oil as needed.
