Fluffy Cottage Cheese Egg Muffins

1 cup cottage cheese

6 large eggs

1 cup spinach, roughly chopped

1/2 red bell pepper, diced

1/2 cup cherry tomatoes, halved

1/4 cup green onions, sliced

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Cooking spray or muffin liners

Preheat the Oven: Preheat your oven to 350°F (175°C). If you’re using muffin liners, place them in a standard muffin tin; otherwise, spray the pan with cooking spray to avoid sticking.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, cottage cheese, garlic powder, onion powder, salt, and pepper until well combined.

      Add Veggies: Fold in the chopped spinach, diced red bell pepper, halved cherry tomatoes, and sliced green onions into the egg mixture. Stir gently to distribute the ingredients evenly.

        Cheese It Up: Gently fold in the shredded cheddar cheese to the egg and veggie mixture, ensuring everything is coated.

          Fill the Muffin Tin: Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full. This will allow the muffins to rise without overflowing.

            Bake: Place the muffin tin in the oven and bake for 20-25 minutes, or until the muffins are puffed up and golden brown on the top. A toothpick inserted in the center should come out clean.

              Cool and Serve: Once baked, remove from the oven and let the muffins cool in the pan for about 5 minutes. Then transfer them to a wire rack to cool completely. Enjoy warm or at room temperature!
