Fluffy Cottage Cheese Egg Muffins

6 large eggs

1 cup cottage cheese (preferably small curd)

1 cup spinach (fresh or frozen, chopped)

1/2 cup cherry tomatoes (halved)

1/2 cup bell pepper (diced, any color)

1/4 cup green onions (sliced)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Non-stick cooking spray or oil for greasing the muffin tin

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with non-stick cooking spray or oil.

    Blend Ingredients: In a large mixing bowl, whisk the eggs until well beaten. Add the cottage cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix until combined.

      Prep the Vegetables: If using fresh spinach, rinse and chop it. If using frozen, thaw and drain any excess water. Prepare the cherry tomatoes, bell pepper, and green onions, adding them to the egg mixture.

        Combine: Stir the chopped vegetables into the egg and cottage cheese mixture until evenly distributed.

          Fill Muffin Tin: Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full. This will allow room for the muffins to rise while baking.

            Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are puffed and set in the center. A toothpick inserted into the middle should come out clean.

              Cool and Remove: Remove the muffins from the oven and let them cool in the pan for about 5 minutes before gently removing them. Use a knife to help loosen if necessary.

                Serve or Store: Enjoy your fluffy cottage cheese egg muffins warm or let them cool completely and store them in an airtight container in the fridge for up to 4 days. They can also be frozen for future breakfasts!
