1 cup long-grain rice (like Basmati or Jasmine)

2 medium onions, thinly sliced

4 tablespoons unsalted butter

2 tablespoons olive oil

3 cups beef or vegetable broth

1 teaspoon sugar

1 teaspoon dried thyme

Salt and pepper to taste

1/2 cup grated Gruyère cheese (or Swiss cheese)

Fresh parsley, chopped (for garnish)

Instructions
 

Caramelize the Onions:

    In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes until the onions are soft and caramelized, adding the sugar and thyme halfway through the cooking time.

      Prepare the Rice:
