French Onion Chicken & Rice

4 boneless, skinless chicken thighs

2 large onions, thinly sliced

3 cloves garlic, minced

1 cup long-grain white rice

2 cups low-sodium chicken broth

1 cup shredded Gruyère cheese

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon dried thyme

½ teaspoon salt

½ teaspoon pepper

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil and butter over medium heat. Add the sliced onions and cook, stirring frequently, for about 15-20 minutes until they are caramelized and golden brown.

    Add minced garlic and dried thyme to the onions, stirring for an additional 1-2 minutes until fragrant.

      Remove the caramelized onions from the skillet and set aside. In the same skillet, increase the heat to medium-high and sear the chicken thighs for 5-6 minutes on each side until golden brown. Season with salt and pepper.

        Once the chicken is browned, reduce the heat to medium and add the rice, chicken broth, and half of the caramelized onions back into the skillet. Stir to combine.

          Bring the mixture to a simmer, cover the skillet with a lid, and reduce the heat to low. Let it cook for about 20 minutes or until the rice is tender and has absorbed most of the liquid.

            In the last 5 minutes of cooking, sprinkle the shredded Gruyère cheese on top of the chicken and rice mixture. Cover again to allow the cheese to melt.

              Once done, remove from heat and let it sit for a few minutes. Garnish with the remaining caramelized onions and fresh parsley before serving.
