Ingredients

2 cups fresh cherries, pitted and halved

3 large eggs

1 cup whole milk

1/2 cup granulated sugar

1 teaspoon pure vanilla extract

1 teaspoon almond extract (optional)

1/4 teaspoon salt

1/2 cup all-purpose flour

Butter, for greasing the baking dish

Powdered sugar, for dusting (optional)

Instructions

Preheat the oven to 350°F (175°C). Butter a 9-inch round or oval baking dish generously to prevent sticking.

Prepare the cherries: Wash the fresh cherries, pit them, and slice them in half. Arrange the halved cherries evenly on the bottom of the prepared baking dish.

Make the batter: In a medium bowl, whisk together the eggs, granulated sugar, vanilla extract, almond extract (if using), and salt until well combined.

Incorporate the flour: Sift the all-purpose flour into the egg mixture and whisk until smooth and free of lumps.

Add the milk: Gradually pour in the whole milk while continuing to whisk until the batter is light and smooth.

Combine: Pour the batter over the arranged cherries in the baking dish.

Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the clafoutis is puffed, golden brown, and a toothpick inserted in the center comes out clean.

Cool and Serve: Once out of the oven, allow the clafoutis to cool slightly. Dust with powdered sugar if desired and serve warm or at room temperature.

Enjoy: This clafoutis can be enjoyed plain or with a dollop of whipped cream or a scoop of vanilla ice cream for extra indulgence.
