Ingredients

4 ripe peaches, sliced

4 cups fresh arugula, washed and dried

1 cup goat cheese, crumbled

1/2 cup walnuts, toasted and roughly chopped

1/4 cup red onion, thinly sliced

1/4 cup balsamic vinaigrette dressing

1 tablespoon honey (optional, for added sweetness)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Prep the Peaches: Wash the peaches thoroughly. Cut them in half, remove the pit, and slice them into thin wedges.

Toast the Walnuts: In a dry skillet over medium heat, toast the walnuts for about 5 minutes, stirring often until they're golden brown and fragrant. Remove from heat and let cool.

Assemble the Salad: In a large salad bowl, combine the fresh arugula, sliced peaches, crumbled goat cheese, toasted walnuts, and sliced red onion.

Dress the Salad: In a small bowl, whisk together the balsamic vinaigrette and honey (if using). Drizzle the dressing over the salad and toss gently to combine. Be careful not to bruise the peaches.

Season: Add salt and pepper to taste, adjusting as needed.

Garnish: If desired, add a few fresh basil leaves on top for an aromatic touch.

Serve: Serve immediately for the freshest flavor, or refrigerate for up to 15 minutes to let the flavors meld.
