6 ripe peaches, peeled, pitted, and sliced

1/2 cup granulated sugar (plus more for peaches)

1 tsp vanilla extract

1 tbsp lemon juice

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp salt

1/2 cup milk

1/3 cup unsalted butter, melted

1/2 tsp ground cinnamon

1/4 tsp nutmeg (optional)

Ice cream or whipped cream for serving (optional)

Prepare the Peaches: Preheat the oven to 375°F (190°C). In a medium bowl, combine the sliced peaches with 1/4 cup of sugar, vanilla extract, and lemon juice. Toss gently to coat and let them sit for about 15 minutes to release their juices.

    Make the Batter: In a large mixing bowl, whisk together the flour, baking powder, salt, and remaining 1/4 cup of sugar. Add the milk and melted butter to the dry ingredients, stirring until just combined. The batter will be thick but should flow easily.
