4 ripe fresh peaches, pitted and sliced

1/2 cup granulated sugar, divided

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon cornstarch

1 tablespoon unsalted butter, cut into small pieces

1 sheet of store-bought pie crust or homemade pie crust

1 egg (for egg wash)

1 tablespoon coarse sugar (for sprinkling)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare the Filling: In a large mixing bowl, combine the sliced peaches, 1/4 cup of granulated sugar, lemon juice, vanilla extract, cinnamon, nutmeg, and cornstarch. Toss gently until the peaches are evenly coated. Let this mixture sit for about 10-15 minutes to allow the flavors to meld and the juices to release.

      Roll Out the Dough: On a floured surface, roll out your pie crust into a circle approximately 12 inches in diameter. Transfer the rolled crust to a lined baking sheet.

        Assemble the Galette: Gently pile the peach mixture into the center of the dough, leaving about a 2-inch border. Fold the edges of the dough over the peaches, pleating as you go to create a rustic look. Dot the filling with small pieces of butter.

          Create Egg Wash: In a small bowl, whisk the egg with a tablespoon of water. Brush the edges of the crust with the egg wash to give it a golden finish. Sprinkle the remaining 1/4 cup granulated sugar and coarse sugar on top.

            Bake the Galette: Place the galette in the preheated oven and bake for 35-40 minutes, or until the crust is golden brown and the peaches are tender and bubbly.

              Cool and Serve: Once baked, remove the galette from the oven and allow it to cool for about 10 minutes. Slice and serve warm or at room temperature, either plain or with a scoop of vanilla ice cream for an added treat!
