Fresh Raspberry Tiramisu

2 cups of fresh raspberries (plus extra for garnish)

1 cup of mascarpone cheese

1 cup of heavy cream

1/2 cup of granulated sugar

1 teaspoon of vanilla extract

1 cup of strong brewed coffee, cooled to room temperature

1 tablespoon of coffee liqueur (optional)

24 ladyfinger cookies

2 tablespoons of cocoa powder (for dusting)

Mint leaves (for garnish)

Instructions
 

Prepare the Raspberries: In a medium mixing bowl, gently mash 1 cup of fresh raspberries with a fork, leaving some whole. Set aside.

    Make the Mascarpone Mix: In a large mixing bowl, combine the mascarpone cheese, granulated sugar, vanilla extract, and heavy cream. Use an electric mixer to whip it together until soft peaks form (about 3-4 minutes).

      Combine Raspberry and Mascarpone: Carefully fold the mashed raspberries into the mascarpone mixture, preserving some chunks for texture. Do this gently to avoid deflating the whipped cream.

        Prepare the Coffee Mixture: In a shallow dish, combine the cooled brewed coffee and coffee liqueur (if using).

          Dip the Ladyfingers: Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy. Lay them side by side in a 9x9-inch square baking dish to form the first layer.

            Layer the Mixture: Spread half of the mascarpone-raspberry mixture over the first layer of ladyfingers, smoothing it out evenly.

              Second Layer: Repeat the process with another layer of dipped ladyfingers followed by the remaining mascarpone-raspberry mixture on top.

                Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best flavors and texture.

                  Serve: Once chilled, dust the top of the tiramisu with cocoa powder. Garnish with remaining fresh raspberries and mint leaves just before serving.
