2 cups all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup cold unsalted butter, cubed

2/3 cup whole milk

1 teaspoon vanilla extract

For the Strawberries:

1 pound fresh strawberries, hulled and sliced

1/4 cup granulated sugar

1 tablespoon lemon juice

For the Whipped Cream:

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Prepare the Strawberries: In a bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Gently mix and let them sit for about 30 minutes to release their juices and create a syrup.

    Make the Shortcake: Preheat your oven to 425°F (220°C). In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the cold cubed butter and use a pastry cutter or your fingers to cut it into the dry ingredients until the mixture resembles coarse crumbs.

      Mix the Wet Ingredients: In a separate bowl, combine the milk and vanilla extract. Pour the wet mixture into the flour mixture and stir until just combined. Be careful not to overmix.

        Shape the Shortcake: On a floured surface, turn out the dough and gently knead it a few times to bring it together. Pat the dough into a 1-inch thick rectangle. Cut out rounds using a biscuit cutter or a glass. Place them on a parchment-lined baking sheet.

          Bake the Shortcakes: Bake in the preheated oven for 12-15 minutes or until golden brown. Remove from the oven and let them cool slightly.

            Prepare the Whipped Cream: In a chilled mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form. Do not overbeat.
