Fresh Summer Nachos Supreme

1 large bag of tortilla chips

1 cup fresh corn kernels (grilled or boiled)

1 large ripe avocado, diced

1 cup cherry tomatoes, halved

1 cup black beans, rinsed and drained

1 jalapeño, sliced (adjust to taste)

1 cup shredded sharp cheddar cheese

1/2 cup crumbled feta cheese

1/4 cup chopped fresh cilantro

1/4 cup green onions, sliced

1 lime (juiced)

1 teaspoon ground cumin

Salt and pepper to taste

Optional: Sour cream and salsa for serving

Prepare the Ingredients: Begin by prepping all your ingredients. Dice the avocado, halve the cherry tomatoes, slice the jalapeño, and rinse the black beans. Set them aside.

    Make the Corn Mix: In a mixing bowl, combine the fresh corn kernels, halved cherry tomatoes, black beans, diced avocado, and sliced jalapeño. Add the lime juice, ground cumin, and season with salt and pepper to taste. Gently toss everything to mix, being careful not to mash the avocado.

      Layer the Nachos: On a large, oven-safe platter or baking sheet, spread an even layer of tortilla chips. Evenly distribute half of the cheese on top of the chips.

        Add the Toppings: Spoon half of the corn mixture over the cheese-covered chips. Repeat with another layer of chips, followed by the remaining cheese and the rest of the corn mixture.
