Ingredients

1 bag (9.5 oz) Fritos corn chips

1 lb ground beef (or black beans for a vegetarian option)

1 small onion, diced

1 clove garlic, minced

1 packet (1.25 oz) taco seasoning

1 can (15 oz) kidney beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 cup shredded cheddar cheese

1 cup sour cream

1 jalapeño, sliced (optional)

¼ cup fresh cilantro, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Beef: In a large skillet over medium heat, add the diced onion and minced garlic. Sauté for 2-3 minutes until softened. Add the ground beef (or black beans) to the skillet, cook until browned, breaking it apart with a spoon. Drain any excess fat if you used beef.

Season It Up: Stir in the taco seasoning, kidney beans, and diced tomatoes. Mix well and let it simmer for about 5-7 minutes until heated through and flavors meld.

Assemble the Frito Pie: In a large baking dish, layer the bottom with Fritos. Pour the beef and bean mixture evenly over the Fritos. Sprinkle the shredded cheddar cheese on top.

Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes or until the cheese is bubbly and golden.

Serve It Up: Remove from the oven and let cool for a few minutes. Top with dollops of sour cream, sliced jalapeños, and fresh cilantro.

Enjoy: Serve hot, and watch your guests dig in for seconds!
