Frozen Banana Oatmeal Pie Bites

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond butter (or nut butter of your choice)

1/4 cup honey or maple syrup

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 cup mini chocolate chips (optional)

1/4 cup chopped nuts (walnuts or pecans, optional)

1/2 cup unsweetened shredded coconut (optional, for rolling)

Instructions
 

In a large mixing bowl, combine the mashed bananas, rolled oats, almond butter, honey (or maple syrup), vanilla extract, and cinnamon. Mix well until all ingredients are fully combined.

    Fold in the mini chocolate chips and chopped nuts if using. Ensure they are evenly distributed throughout the mixture.

      Line a baking tray with parchment paper. Using a tablespoon or cookie scoop, drop spoonfuls of the mixture onto the prepared tray, shaping them into small bite-sized rounds.

        If desired, roll each bite in shredded coconut for an extra layer of flavor and texture.

          Place the tray in the freezer for about 1-2 hours, or until the bites are firm and set.

            Once frozen, transfer the pie bites to an airtight container or a zip-top bag. They can be stored in the freezer for up to 3 months.

              To serve, simply take out a few bites and enjoy them frozen or let them sit at room temperature for a few minutes to soften slightly before eating.
