Ingredients

2 ripe bananas

1 cup rolled oats

1/4 cup natural nut butter (peanut, almond, or cashew)

2 tablespoons honey or maple syrup

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

A pinch of salt

Optional toppings: chopped nuts, mini chocolate chips, or dried fruits

Instructions

Prepare the Bananas: Peel the bananas and place them in a mixing bowl. Using a fork, mash them until smooth but still slightly chunky. This will give your sandwiches some texture.

Combine Ingredients: To the mashed bananas, add the rolled oats, nut butter, honey (or maple syrup), vanilla extract, ground cinnamon, and a pinch of salt. Stir until all the ingredients are well mixed and the oats are fully coated.

Form Coins: Using a tablespoon or a cookie scoop, take a small amount of the mixture and form it into flat, round coins (approximately 1 to 2 inches in diameter) on a parchment-lined baking sheet. Repeat until all the mixture is used, leaving a small space between each coin.

Freeze: Place the baking sheet in the freezer and freeze the coins for at least 1 hour, or until solid.

Assemble the Sandwiches: Once the coins are frozen, take them out of the freezer. Spread a thin layer of nut butter on one coin and place another coin on top to create a sandwich. Repeat for the remaining coins.

Wrap & Store: Wrap each sandwich in plastic wrap or place them in an airtight container. Return to the freezer for quick snacks or breakfast on-the-go.

Serve: Enjoy straight from the freezer, or allow them to thaw for a few minutes for a softer treat.
