Ingredients

2 medium ripe bananas

1 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup (adjust for sweetness)

1/2 teaspoon vanilla extract

1/4 cup crushed walnuts or pecans

1/4 cup mini chocolate chips

1/4 cup shredded coconut (unsweetened or sweetened, based on preference)

1/4 cup sliced strawberries (fresh or frozen)

1/4 cup mini marshmallows (optional)

4 whole grain or chocolate wafer cookies (for sandwich assembly)

Instructions

Prepare the Bananas: Peel the bananas and slice them into 1-inch thick rounds. Lay the banana slices flat on a baking sheet lined with parchment paper.

Make the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Mix well until smooth and creamy.

Assemble the Yogurt Filling: Spoon a dollop of the yogurt mixture onto each banana slice. Top them with a sprinkle of crushed nuts, mini chocolate chips, shredded coconut, sliced strawberries, and mini marshmallows if using. Be generous with the toppings to create an indulgent treat.

Create the Sandwiches: Place a second banana slice on top of each prepared yogurt-topped slice to form a sandwich.

Freeze the Sandwiches: Carefully place the assembled banana sandwiches back onto the parchment-lined baking sheet. Freeze for at least 2 hours or until firm.

Serve: Once fully frozen, remove the sandwiches from the freezer. Let them sit for a minute at room temperature for easier biting, then enjoy as a fun and refreshing treat!
