Ingredients

2 cups mixed frozen berries (strawberries, blueberries, raspberries)

2 cups rolled oats

1 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup

1/4 cup almond butter (or any nut butter of your choice)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

A pinch of salt

Optional toppings: chia seeds, sliced almonds, shredded coconut, dark chocolate chips

Instructions

Prepare the Base:

In a large mixing bowl, combine the rolled oats, Greek yogurt, honey (or maple syrup), almond butter, vanilla extract, cinnamon, and a pinch of salt. Mix well until all ingredients are evenly incorporated and form a thick mixture.

      Add the Berries:

Gently fold in the mixed frozen berries, taking care not to break them apart too much. You want them to be distributed throughout the mixture without becoming mushy.

          Line the Baking Pan:

Line a baking sheet (about 9x13 inches) with parchment paper, allowing some excess paper to hang over the edges for easy removal later.

              Spread the Mixture:

Pour the oat and berry mixture onto the lined baking sheet. Use a spatula to spread it out evenly, creating a layer about 1/2 inch thick.

                  Add Toppings:

If desired, sprinkle chia seeds, sliced almonds, shredded coconut, or dark chocolate chips over the top of the bark. Press them gently into the mixture so they adhere once frozen.

                      Freeze:

Place the baking sheet in the freezer and let it freeze for at least 4 hours or until completely firm.

                          Slice and Store:

Once hardened, lift the bark out of the pan using the parchment paper. Place it on a cutting board and slice it into desired shapes (rectangles or squares work best).

                              Serve:

Enjoy the breakfast bark immediately or store it in an airtight container in the freezer for up to 2 weeks. Take a piece out the night before for a quick breakfast option!
