1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon vanilla extract

1 cup fresh or frozen blueberries (thawed if using frozen)

1 cup granulated sugar

⅓ cup fresh lemon juice (about 2-3 lemons)

Zest of 2 lemons

3 large eggs

¼ cup all-purpose flour

½ teaspoon baking powder

For the topping:

1 cup whipped cream or coconut whipped topping (optional)

Lemon zest and blueberries for garnish

Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish or line it with parchment paper for easy removal.

    Make the crust: In a mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and vanilla extract. Mix until the crumbs are evenly coated and resemble wet sand. Press the mixture firmly into the bottom of the prepared baking dish to form an even layer.

      Pre-bake the crust: Bake the crust in the preheated oven for about 10 minutes, until slightly golden. Remove from the oven and allow to cool slightly while you prepare the filling.

        Prepare the filling: In a large bowl, combine the blueberries, granulated sugar, lemon juice, and lemon zest. Use a fork to gently mash some of the blueberries to release their juices, leaving some whole for texture.

          Add eggs and dry ingredients: Whisk in the eggs until fully incorporated. Sift the flour and baking powder over the mixture and fold gently until just combined. Be careful not to overmix.

            Pour and bake: Pour the filling over the cooled crust and spread it evenly. Bake in the oven for 25-30 minutes, or until the filling is set and slightly firm in the center. The edges may start to turn a light golden brown.

              Cool and freeze: Remove the pan from the oven and allow it to cool to room temperature. Once cooled, cover with plastic wrap and freeze for at least 3-4 hours, or until completely frozen.

                Slice and serve: When ready to serve, remove the lemon bars from the freezer and let them sit at room temperature for about 10 minutes before slicing. For a creamier finish, serve with whipped cream on top, garnished with additional lemon zest and blueberries if desired.
