Ingredients

2 cups fresh or frozen blueberries

1 tablespoon honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup Greek yogurt (plain or vanilla-flavored)

1/2 cup granola (your favorite kind)

1/4 teaspoon cinnamon (optional)

A pinch of salt

Mini paper or silicone baking cups

Instructions

Prepare the Blueberries: If using fresh blueberries, rinse them under cold water. For frozen blueberries, let them thaw slightly at room temperature, then drain any excess liquid.

Sweeten the Blueberries: In a medium bowl, mix the blueberries with honey or maple syrup, vanilla extract, and a pinch of salt. If desired, add cinnamon for extra flavor. Gently stir to combine, being careful not to mash the blueberries too much.

Create the Yogurt Mixture: In another bowl, combine the Greek yogurt with any remaining honey or maple syrup (if needed for more sweetness). Mix well until smooth and creamy.

Layer the Ingredients: Take your mini baking cups and add about a teaspoon of granola to the bottom of each cup. This will provide a nice crunchy base for the pie bites.

Add the Yogurt: Spoon about a tablespoon of the yogurt mixture over the granola in each cup, filling them about halfway.

Top with Blueberries: Carefully spoon the blueberry mixture on top of the yogurt layer, distributing the blueberries evenly across all cups.

Final Layer of Yogurt: Add another tablespoon of the yogurt on top of the blueberries to seal everything in, smoothing it out gently.

Freeze: Place the filled cups in the freezer for at least 4 hours or until completely frozen.

Enjoy: Remove the cups from the freezer and let sit for a couple of minutes at room temperature before serving. Peel away the cups and enjoy your Frozen Blueberry Yogurt Pie Bites!
