1 cup grated carrots (about 2 medium carrots)

1 cup Greek yogurt (plain or vanilla)

1/2 cup rolled oats

1/2 cup honey or maple syrup

1/4 cup unsweetened applesauce

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or sultanas (optional)

Muffin pop molds or paper cups with sticks

Instructions
 

Prepare Carrots: Peel and grate the carrots using a box grater or a food processor. Set aside.

    Mix Wet Ingredients: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), applesauce, and vanilla extract. Whisk until smooth and well combined.

      Combine Dry Ingredients: In a separate bowl, combine the rolled oats, ground cinnamon, ground nutmeg, and salt. Mix well.

        Combine All Ingredients: Add the grated carrots, dry mixture, and optional chopped nuts and raisins to the wet ingredients. Stir everything together until well incorporated.

          Fill the Molds: Spoon the mixture into muffin pop molds or paper cups, filling them about 3/4 full. If using muffin pop molds, insert sticks into the center before freezing.

            Freeze: Place the filled molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid.
