Ingredients

1 cup almond flour

1 cup unsweetened shredded coconut

1/2 cup maple syrup or honey

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1 cup dark chocolate chips (preferably dairy-free)

1 tablespoon coconut oil (for chocolate coating)

Optional: Chopped almonds for topping

Instructions

Prepare the Base: In a medium mixing bowl, combine the almond flour, shredded coconut, maple syrup, melted coconut oil, vanilla extract, and sea salt. Stir until the mixture is well combined and feels slightly sticky.

Form the Squares: Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal. Press the coconut-almond mixture evenly into the bottom of the prepared dish, smoothing it out with a spatula. Make sure it's compact for best results.

Freeze the Layer: Place the dish in the freezer for about 1 hour or until the base is firm enough to cut.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and the additional tablespoon of coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.

Coat the Squares: Remove the coconut-almond base from the freezer. Lift it out of the dish using the parchment overhang. Cut into squares (desired size) and dip each square in the melted chocolate, ensuring they are fully coated. Allow excess chocolate to drip off.

Top with Nuts: If desired, sprinkle chopped almonds on top of each square before the chocolate hardens. Place the squares back on the lined baking sheet.

Final Freeze: Return the coated squares to the freezer and let them set for another 30 minutes until the chocolate has hardened completely.

Serve and Enjoy: Once set, store the squares in an airtight container in the freezer. Enjoy as a refreshing treat straight from the freezer!
