1 cup coconut milk (full-fat for creaminess)

1/4 cup honey or maple syrup (adjust sweetness to taste)

1 teaspoon pure vanilla extract

1/2 cup chia seeds

1/4 cup unsweetened shredded coconut

Pinch of sea salt

Optional toppings: dark chocolate chips, extra shredded coconut, or crushed nuts

Instructions
 

In a mixing bowl, whisk together the coconut milk, honey (or maple syrup), vanilla extract, and a pinch of sea salt until fully combined.

    Stir in the chia seeds and ensure they are evenly distributed within the mixture.

      Let the mixture sit for about 10 minutes, stirring occasionally. This allows the chia seeds to absorb some liquid and swell, creating a gel-like consistency.

        Once the chia seed mixture has thickened, fold in the shredded coconut.

          Line a mini muffin tin with paper liners or use silicone molds for easy removal. Spoon the mixture into each mold, filling them about 3/4 full.

            Tap the muffin tin gently on the counter to settle the mixture and remove any air bubbles.

              Place the muffin tin in the freezer for at least 4 hours, or until the bites are completely solid.

                Once frozen, pop the coconut chia bites out of the molds and store them in an airtight container in the freezer.

                  Serve frozen as a refreshing snack or treat, optionally drizzled with melted dark chocolate or sprinkled with extra coconut or nuts before serving.
