2 ripe mangoes, peeled and diced

2 cups plain Greek yogurt (full-fat for creaminess)

1/4 cup honey (adjust to taste)

1 tbsp fresh lime juice

1/4 tsp vanilla extract

Pinch of salt

Optional toppings: shredded coconut, chopped nuts, or granola

Instructions
 

Prepare the Mango: In a blender or food processor, add the diced mangoes and blend until smooth. You can leave a few small chunks for added texture if desired.

    Mix the Yogurt: In a mixing bowl, combine the Greek yogurt, honey, lime juice, vanilla extract, and a pinch of salt. Stir until the honey is fully incorporated and the mixture is smooth.

      Combine Mixtures: Gently fold the mango puree into the yogurt mixture until fully blended. Taste and adjust sweetness if needed by adding more honey.

        Pour into Molds: Pour the mango yogurt mixture into silicone ice pop molds or a lined rectangular baking dish for easy slicing later. If using a baking dish, smooth out the top for an even surface.

          Insert Sticks: If you’re using molds, insert sticks according to the manufacturer’s instructions. For a baking dish, you can freeze for about 2 hours until partially set and then insert wooden sticks.

            Freeze: Place the molds or baking dish in the freezer and freeze for at least 4-6 hours or until completely solid.

              Serve: To remove the bars from molds, run them under warm water for a few seconds. If you used a baking dish, slice into bars or squares. Serve immediately topped with your choice of shredded coconut, chopped nuts, or a sprinkle of granola.

                Store: Place any leftovers in an airtight container and keep them in the freezer. Enjoy within 2-3 weeks for the best taste.
